Garden-In-A-Bag

I am huge a fan of fresh herbs and using them while cooking. You could imagine how excited I was when I found these garden-in-a-bag collections? Each bag is ready to go for your indoor garden. Simply open the top of the leak-proof bag, add water, and place it by your kitchen window. Within weeks, your little herb garden will begin to grow. If weather permits, you can transfer your herb outside or keep in the bag and continue to use. It’s always fresh. You can always freeze your fresh herbs by wrapping them in clear wrap and use when ready to cook.

Zucchini Quiche

- 3 c. shredded or diced Zucchini
- 1/2 c. diced Onion
- 2 tbsp. chopped Parsley
- 4 slightly beaten Eggs or the equivalent of Egg Beaters
- 1 c. Bisquick
- 1/2 c. Parmesan Cheese
- 1/2 tsp. Oregano
- 1/4 c. Oil
- dash of Salt and Pepper

To begin, preheat your oven to 350 degrees. Mix ingredients together in a large bowl. Spray or grease a large quiche or pie plate and add mixture. You can sprinkle parsley over the top before baking. Cook for about an hour and golden brown.






Valentine’s Heart Shaped Pancakes

 

Ingredients:

- 1 cup of Aunt Jemima Pancake Mix
- 3/4 cup of Milk
- 1 tbsp. Vegetable Oil
- 1 Egg

Follow mixing directions on the box.

Heat griddle. Place heart shaped mold on griddle and slowly pour the batter evenly. Cook through. Remove and plate. Add fruit, powdered sugar, or chocolate chips for a special valentines day breakfast.

Grilled Chicken Caesar Salad Pizza

 

- 2 small Romaine Lettuce, chopped
- 8 ounces grilled boneless, skinless Chicken Breast
- 1 one-pound fresh Pizza Dough
- 1 cup Provolone Cheese, grated
- Caesar Salad Dressing
- Croutons
- Parmesan Cheese
- Salt and Black Pepper

 

To begin, preheat the oven to 375 degree. Lightly flour your work space so you can work the dough into round pizza shape. Gently transfer the dough onto a round pizza baking sheet and bake until golden brown, about 10- 15 minutes. Remove the pizza crust from oven and spread the shredded provolone evenly. Place it back into the oven until all of the cheese is melted.

Remove from oven and set aside.

In a large mixing bowl, combine lettuce, cooked grilled chicken, and croutons. Add dressing, Parmesan cheese, salt and pepper to taste. Toss well. Spread the salad mixture over the pizza crust and serve.

Coffee Cake

 

Here is an easy way to make Coffee Cake recipe, that is quick and delicious.

- 1 1/2 cup of Sifted Flour
- 2 teaspoons of Baking Powder
- 3/4 cup of Sugar
- 1/2 teaspoon of Salt
- 1 Egg
- 1/4 of Vegetable Oil
- 1/2 Milk

 

Topping :
- 1/4 cup of Brown Sugar
- 1 teaspoon of ground Cinnamon
- 1 tablespoon of melted Butter
- 1 table spoon of Flour
- 1/2 cup of chopped Walnuts or Pecans

To begin, set your oven to 375 degree.Sift together the dry ingredients in a large bowl and set aside. In another bowl, mix egg, milk, and oil. Add mixture to the dry ingredients. Mix well. Pour into a greased-floured baking pan. Mix together the ingredients for the topping. Sprinkle the top of the batter with the topping mixture. Bake for about 25 minutes.

Mini Cheesecakes

 

- 2 packages of soften Cream Cheese
- 1/2 cup of Sugar
- 1 tsp of Vanilla
- 2 Eggs
- 1 box of Vanilla Wafers
- Foil Cupcake liners

 

To begin, preheat your oven to 325 degrees. Next, in a large bowl mix vanilla, cream cheese, and sugar on medium speed until creamy. Add eggs one at a time and mix well.

Set mixture aside and line your muffin pan with cupcake liners and place 1 vanilla wafer in each one. With a tablespoon add mixture over each wafers, filling each one almost to the top. Bake for 25 minutes. Remove from oven and set aside. Once they are cooled top with your favorite fruit or preserves.

*Mixture should make about a dozen or so mini cheesecakes.

Struffoli

 

- 3 cups of Flour
- 1/2 tsp of Baking Powder
- 3 Eggs
- 1/2 stick of melted Butter
- Juice from 1/2 of a fresh Orange
- 1 cup of Sugar
- 1 tsp Vanilla
- Honey : 16ounce
- Crisco : 16 ounce
- Candied Sprinkles

Mix together eggs, butter, juice, sugar, and vanilla until well blended. Add flour and baking power to form soft dough. Roll ini 1/2in wide ropes. Cup into small pieces. Melt enough crisco to fry your dough. Cook until golden brown and set aside. Melt as much honey needed and pour over your fried dough. Then add sprinkles.

Peanut Butter & Chocolate Cookies

 

These are one of my favorite cookies. Many years ago, a good friend of mine gave me this recipe and I bake them every Christmas Eve.

- 1 1/2 cup Brown Sugar
- 1 cup of soften Butter
- 1/2 cup of crunchy Peanut Butter
- 2 Eggs
- 2 teaspoons Vanilla
- 2 cups of Flour
- 1/2 cup of unsweetened Cocoa
- 2 teaspoons of Baking Powder

Combine sugar, butter, and peanut butter in a large bowl and mix on medium speed with mixer until creamy. Then add eggs and vanilla.  Next, On low speed, add flour, cocoa, and baking powder. Mix well, cover, and refrigerate for 4 hours.

Preheat oven to 350 degrees. Roll the dough into a log and slice them 1/4 inch thick and place on an un- greased cookie sheet. (If the dough is sticky, lightly flour your hands and that should do the trick).   Bake for 10-12 minutes and then place on a cooling rack to cool.

Serve and Enjoy!




TGIF Treat – Sweet Treats Candy Apple

I thought I would change it up a bit this Friday and share a fabulous treat that you will love! A few weeks ago during an event, I has the pleasure of sampling some of the most delicious candy apples from Sweet Treats Candy Apple Shoppe. Sugar Cookies

 

Ingredients

- 5 cups all purpose Flour
- 2 cups of Sugar
- 2 teaspoons of Baking Powder
- 4 Eggs
- 1 1/2 cups Butter, softened
- 1 teaspoon Vanilla Extract
- 1 teaspoon Salt

In a large bowl mix together the dry ingredients and set aside. In a separate bowl mix butter and sugar until smooth. Next, add eggs and vanilla to the butter/sugar mixture. Now, slowly combine the dry ingredients to the mixture and mix well. Cover and chill the dough for about an hour or so.

Once dough has been chilled, set your oven to 400 degrees. Roll out your cookie dough to out to about a 1/2 inch in thickness. (If you find that the dough is
sticky, use confectioner sugar on the rolling pin). Use fun holiday cookie cutters to create your shapes and then place on a non greased cookie sheet. Bake
for 5-7 minutes.

Cool and decorate!
